Essential rules passed down through generations to guarantee an elite cook.

Rule #1: Never Stir the Pot!

Stirring mixes layers and causes delicate ingredients (like potatoes and squash) to dissolve into mush. Pack layers logically, close the lid, and let the steam do the work.

Heat Control (Three-Coal Rule)

A potjie requires a slow, rhythmic simmer, not a boil. Keep only 3-4 small hot coals underneath the pot to sustain a gentle "whisper" sound from inside the iron.

Cast Iron Maintenance

Never wash with harsh soaps or leave wet to rust. Scrub clean with hot water and coarse salt, dry thoroughly on warmth, and seal the inside with a light layer of cooking oil.

Firemaster's Wisdom Hearth Tips

🔥 Rule #1: Never stir the potjie! Layer your ingredients (meat at the bottom, hard veg next, soft veg on top) and let the steam cook it.

🪵 Coals Management: Keep a separate side-fire going. This gives you a continuous supply of fresh, hot wood coals to place under the potjie.
