Rule #1: Never Stir the Pot!

Stirring mixes layers and causes delicate ingredients (like potatoes and squash) to dissolve into mush. Pack layers logically, close the lid, and let the steam do the work.

Heat Control (Three-Coal Rule)

A potjie requires a slow, rhythmic simmer, not a boil. Keep only 3-4 small hot coals underneath the pot to sustain a gentle "whisper" sound from inside the iron.

Cast Iron Maintenance
